Chongqing Cool Shrimp – shaped Rice Dumplings

Chongqing Liangxia is not actually made from shrimp, but rather a unique rice-based dessert crafted from rice paste, shaped to resemble tiny shrimp.

During preparation, rice is ground into paste, poured into boiling water, and stirred rapidly until thickened. The mixture is then scooped into cold water using a perforated spoon to cool and set. The finished product forms cylindrical shapes, resembling lively little shrimp.

To serve, place the Liangxia in a bowl and drizzle with brown sugar syrup. Optional toppings include fermented glutinous rice, ice cubes, hawthorn berries, and crushed peanuts. Its texture is soft and silky, melting in the mouth for a refreshingly cool experience. The sweetness of the brown sugar syrup blends with the subtle tang of fermented glutinous rice and the fragrant aroma of the rice dough.

On sweltering summer days, this snack quenches thirst and satisfies hunger, making it a beloved summer treat among Chongqing locals. It can be easily found at street stalls and dessert shops throughout the city.
