Chongqing Grilled Pig Brain
Chongqing Roasted Pig Brain is a signature dish at night market stalls in Chongqing. Despite its unique ingredient, its delicate texture and rich flavor attract numerous diners.
Fresh pig brain is thoroughly cleaned, then placed in a foil tray with ginger, garlic, bird’s eye chilies, dried chilies, Sichuan peppercorns, light soy sauce, oyster sauce, cooking wine, and other seasonings. A small amount of broth or water is added. The foil tray is placed over charcoal and slow-roasted, requiring constant turning to ensure even heating.
During roasting, the pork brain gradually solidifies as the seasonings’ aromas permeate its interior. Once cooked, garnish with chopped scallions and cilantro, then drizzle with hot oil.
